Vanilla Loaf Cake with Salted White Chocolate Icing

Sweet and moist vanilla loaf cake, topped with an epic salted white chocolate buttercream and fresh berries.

Vanilla Bean Loaf Cake with Salted White Chocolate Frosting

Ingredients:

For the cake:

40g/ 1/3 stick unsalted butter, at room temperature
240g/ 1 1/2 cups sugar
2 eggs
240g/ 1 2/3 cups flour
1 tsp baking powder
pinch salt
120ml/ 1/2 cup whole milk
2 tsp vanilla bean extract

For the icing:

50g/ 2oz/ 1/2 stick unsalted butter, at room temperature
225g/ 8oz/ 1 1/2 cups icing sugar/ powdered sugar
200g white chocolate
3 tbsp whole milk

1 tsp flaky sea salt, or to taste

fresh berries to decorate

To make the cake:

– Preheat the oven to 180°C/ 350°F and grease a small loaf tin
– Whisk together the butter, sugar and eggs until smooth and creamy.
– Fold in the flour, baking powder and salt.
– Whisk in the milk and vanilla.
– Dollop the mixture into the loaf tine  and bake for 25-30 minutes, or until risen and golden brown.
– Leave to cool in the tin for 5 minutes before moving to a wire rack to cool completely.

To make the icing:

  • Melt the white chocolate and leave to cool
  • Whisk together sugar, chocolate, butter and milk until you have a super smooth frosting. Add salt to taste.
  • Spread over the cake and top with fresh berries
