Sweet and moist vanilla loaf cake, topped with an epic salted white chocolate buttercream and fresh berries.

Vanilla Bean Loaf Cake with Salted White Chocolate Frosting
Ingredients:
For the cake:
40g/ 1/3 stick unsalted butter, at room temperature
240g/ 1 1/2 cups sugar
2 eggs
240g/ 1 2/3 cups flour
1 tsp baking powder
pinch salt
120ml/ 1/2 cup whole milk
2 tsp vanilla bean extract
For the icing:
50g/ 2oz/ 1/2 stick unsalted butter, at room temperature
225g/ 8oz/ 1 1/2 cups icing sugar/ powdered sugar
200g white chocolate
3 tbsp whole milk
1 tsp flaky sea salt, or to taste
fresh berries to decorate
To make the cake:
– Preheat the oven to 180°C/ 350°F and grease a small loaf tin
– Whisk together the butter, sugar and eggs until smooth and creamy.
– Fold in the flour, baking powder and salt.
– Whisk in the milk and vanilla.
– Dollop the mixture into the loaf tine and bake for 25-30 minutes, or until risen and golden brown.
– Leave to cool in the tin for 5 minutes before moving to a wire rack to cool completely.
To make the icing:
- Melt the white chocolate and leave to cool
- Whisk together sugar, chocolate, butter and milk until you have a super smooth frosting. Add salt to taste.
- Spread over the cake and top with fresh berries
