Having been to Barcelona a few times before, I’m only slightly ashamed to say I spent most of my time there doing nothing remotely cultural. Instead I spent my time lying in the sun and eating as much delicious food and drink as possible. My favourite kind of holiday.

I’m ignoring the fact we’re fast heading into autumn (it’s still warm and sunny in London for now, yay!) And still dreaming of summery drinks on roof terraces. This sangria is totally perfect for that.

I have made a lot of chocolate chip cookies in my time, but this is the recipe that I’m now totally obsessed with. These salted milk chocolate chunk cookies are that perfect mix of thin and crispy around the edges, and ultra soft and chewy in the middle. I cannot get enough.

These cookies are made with the basically magical combo of brown sugar and brown butter. Then studded with giant chocolate chips and topped with flaky sea salt.

White Chocolate Jammie Dodger Blondies

These blondies are super fudgy and incredibly moreish. Made with lots of brown butter & brown sugar, and studded with white chocolate and jammie dodgers, these bars don’t pretend to have anything remotely healthy about them. They are however worth every single delicious calorie.

I like to under-bake these to ensure optimum fudginess, but if you prefer a cakier texture, just add another 10 minutes to the baking time.

Super Easy No-Bake Malteser Bars

Dangerously easy and extremely moreish, these no-bake malteser bars have an addictive chewy texture. They’re filled with maltesers, crushed digestives and smooth milk chocolate and topped with a sweet white chocolate layer.

I first tried something similar at the delicious Cloud 9 bakery in Brighton, and then was desperate to replicate them. I’m happy to say these come pretty close.

They only take about 10 minutes to prepare, you just have two challenges afterwards – patiently waiting for them to chill, and then not eating the whole pan.
